If I am choosing between two Monstera Devil Monsters, I would rather see interesting, well-distributed variegation across a healthy plant than judge it by the percentage of white on one leaf.
The green portions of a leaf contain the chlorophyll the plant uses for photosynthesis. Extremely pale leaves can be spectacular, but a plant also needs enough functional green tissue to support healthy growth.
The sweet spot is balance.
You want enough contrast to make the plant extraordinary, while still seeing the green tissue and strong growth that make the plant sustainable.
That is why I pay attention to the leaf and stem variegation as much as the white color.
